What’s not to love about one of Australia’s most beautiful and iconic national parks area, the Blue Mountains? Just outside of Sydney, the Blue Mountains harbors some incredible observation points, eucalyptus forests, waterfalls and mountain villages. Particularly beautiful in Winter, when it often snows, we stayed at the historic Carrington Hotel in Katoomba. The hotel is the perfect place to stay in the Blue Mountains; filled with antique wooden furniture, stained glass windows, and a room filled with couches and fireplaces just off the bar downstairs, it offsets the whole mountain experience quite nicely… gin in hand (of course).
Visiting Japan for the first time in 2016 was an experience that I will never forget. It was truly life altering. Not only is Japan a visually spectacular country, the food; culture; and people, all made the trip an even more pleasurable experience.
I spent three weeks there, from late May to mid-June, and never did I expect that I could come back from a very busy three week holiday itinerary and think to myself, “I’ll have to go back at least five more times before I even scratch the surface of things to do in Japan.”
I can’t wait to go back!
